On the Hoof
Tom Bradley's 'On The Hoof' at the English Market opened near the Grand Parade entrance of the English Market in November 2025.
The food to go options available consist of gourmet sandwiches, excellent soups and a range of ready to eat salads. Ideal for eating on the hoof or bringing home or back to work. Seating is available on the street or across the street in the newly renovated Bishop Lucey Park.
On The Hoof is a sister stall to Tom Bradley Bacon & Pork which has been trading in Princess St end The English Market, by the fountain, for many years and specialises in local hand cut bacon which has been available on the stall since the 1980’s.
In 2025, Tom decided to use his fresh cut bacon and local pork as the basis for opening his new hot food operation in The Market. The ethos of the stall is locally sourced fresh top quality ingredients and 100% compostable packaging. Over 90% of our ingredients are sourced from the other stall holders within The Market itself.
Tom enlisted the expertise and creativity of Eoin Beville who has been a well known Chef in Cork and London for many years. Tom’s experience in fresh meat and curing and smoking in conjunction with Eoin’s chef pedigree has created On The Hoof.
A small selection of their well known daily favourites are:
-The Salt Beef Bagel, made using local beef brisket and Eoin’s own cure, slow cooked for 18hrs.
-Banh Mi, a traditional Vietnamese sandwich made using fresh pork belly from Tom Bradley and chicken liver pate from On the pig’s back, among the many ingredients.
-“The Bradley”, which is made from hand carved Gammon ham sourced from Tom’s bacon stall and a sharp cheddar cheese sourced in North Cork. It’s definitely no ordinary Ham & Cheese sandwich.
They also offer soups ready to eat or take home, they make the finest French Onion soup you can find outside of France.
Opening Hours are Monday to Saturday 9am to 4pm.
