Tom Bradley Pork & Bacon specialise in locally reared and produced Pork and bacon products. We smoke our own bacon in Ballincollig and we dry cure a range of bacon on the stall in the English Market. Some of our dry cures are made using Irish Whiskey and local honey, we do regular dry cure and sweet dry cures too. We use nothing but fresh local pork loins and bellies, and fresh local bacon loins for our rashers.
We also have seasonal ranges, we have a great summer BBQ range including fresh and marinated Loins, Bellies, Chops as well as our famous bbq chilli and coriander baby back ribs. All our marinated products are also gluten free. We also specialise in top quality hams for Christmas and Easter and rolled stuffed rind on pork belly for which we make our own stuffing from ingredients sourced in the English Market.
We offer smoked and unsmoked freshly sliced rashers, hand rolled and sliced bacon joints, Bodice freshly cured every day on site as well as a range of sausages and puddings from Jack McCarthy of Kanturk and Clonakilty Sausage and puddings.
